Some times are times when one needs comfort food. For me a well done fritter improvisation is the ultimate at achieving the holy grail status of medical grade comfort food. These Fritters with Kumara and leek are magical!
Essentially a jazz jam around a set of vague guidelines that lets one grate up most any ingredients left in the produce drawer in the fridge, or the potato cellar.
Grate your preferred vegetables with whatever cheeses are on hands, whip and egg and drop a few tablespoons of flour, Voila you got a fritter, just need some hot oil and a non Teflon skillet. Apart from that basic framework there really are no rules to the fritter as far as I’m concerned, in fact, the cheeses are optional in hard times, an egg can be substituted for a tablespoon of hydrated chia seeds for a vegan lifestyle.
The spice profiles of fritters can be greatly varied from a smoky Mexican chipotle style, to a more Indian styled configurations, or tangy Mediterranean takes. There are no rules spice wise. Its Jazz man.

After coming by to finally receive our first official Ravers Co – Peace, Love and Unicorns business cards, just to make things official. Feeling right at home in the unicorn cottage I decided to spend the night. In the morning I felt that familiar urge, that Jazz feeling. So I strolled down to the local plug, the neighbourhood nutritional vigilante and everyone’s go to vegetable dealer.
I can say this, adversity breeds creativity, as the old bank account balance was rather low, but the hunger levels high. Never mind, the funds spent on a leek, two kumara, some agria potato’s. Not much for 3 people you’d think, a total of 7.50 that would be spent to feed three ravers twice on that Sunday day.
That’s right, double down, thinking 2.50 per person for a meal not enough of a challenge, I decided to double the number of meals, and make a soup for after the fritters had done their job. The deal I did with that chicken for a single egg I will not go into, but lets just say it was much more than money I had to pay for the privilege of taking this brooding mother hens pride and joy that morning.
Never mind, the egg did its job, and held the fritters together beautifully, adding a crispy texture o.ne strives for in a quest like this. Limited by funds, but not imagination, I was going to do the poor, hungry souls of the world. The goal? The worlds most budget gourmet level fritter. The result?
The fritters recipe
300 Grams Agria potatoes, grated with moisture squeezed out
300 Gram Kumara of your choosing, a combination of colours works great, grated with skin on and moisture squeezed out
1 leek finely chopped, both parts
1 cup grated cheese, i used half tasty cheddar half gouda
1 egg, beaten
2 Tablespoons flour
1 teaspoon cayenne pepper
1 teaspoon smoky paprika
1 teaspoon salt
1 teaspoon pepper
Cooking oil-Ideally coconut for most cooking I do
The instructions
Heat a skillet with the cooking oil of your choice. Combine all ingredients, make flat patties about a handful in size.
Fry on each side until gold and crispy.
