This Spicy Vegan Lemon And Tangerine Curd will rock your world!
Sometimes, times are tough. Maybe you’ve been dancing in a cold paddock for a few nights, and the last night has you feeling cold and drained. Maybe you’ve just gotten back from a 7 day festival in a desert, and you’re rinsed, tired and lacklustre. Well, sometimes the answer to your problems is something simple, something sweet and spicy, to warm your blood and give you some energy. And so we have, this gorgeous Spicy Vegan Lemon And Tangerine Curd, made with ginger and cayenne pepper I have been developing for a while. Finally the batch I whipped up today was so good I thought I should share the recipe.
You Will Need
1/2 cup raw sugar
1 table spoon corn starch
1/2 cup plant based milk (oat or coconut works well)
the juice and zest from two lemons and two tangerines (or any other citrus works well, experiment, mandarins or even grapefruit will work perfectly)
1 inch section of ginger, grated finely
1 teaspoon cayenne pepper
The Process
Simply combine all the ingredients in a small pot, bring to a boil while stirring, and reduce heat to a simmer. Stir continuously until the curd thickens. Wait for it to cool and transfer to a glass jar. Make a nice label, and put half in your fridge for when you return from whatever event your attend. Bring half with you along with perhaps some brioche for that spicy energy boost that will take the chill from your bones. Make sure to try to share, this reporter must admit that there have been a few times I make this up and end up munching back the entire lot in under 24 hours! That much sugar is not good for any one person, please, please learn from my mistakes. Make sure to let your friends sample it immediately. Every time I have let housemates try this, it never lasts until the next morning!
